February 15th-17th 2021 – Fabulous Fava
Spring-like weather is just what the fava beans ordered to produce bountiful yields, fill our harvest buckets and your boxes. This member of the venerable legume family, whose chubby green pods are covered with a soft, cottony lining, has been gracing you with his presence for some time now. And because he is an infrequent guest, we make it our business to tell you a little about him whenever he drops in for a visit.
Dry and fresh fava beans have been consumed in the Middle East and in North and South Africa for thousands of years. Fava fossils have even been found in in Middle East archeological sites from as early as 6500 BC (in our very own Nazareth)! It served as an important, essential food for all classes. Fava is rich in protein, complex carbohydrates, and dietary fibers. It contains a good amount of iron, folic acid, potassium, magnesium and zinc.
